Zucchini Bisque - When you grow too many zucchini-- or your neighbor does

2 medium onions (less for me-- about 1/2 an onion)

2 T butter

1 ½ lb zucchini

3 c chicken broth

1 ½ c half and half

1/4 tsp pepper

½ tsp salt

⅛ tsp nutmeg

(I added corn)


Chop and cook onions in butter until clear and soft, but not browned.

Wash and slice zucchini.  Combine onion, zucchini, and chicken broth in saucepan and bring to boil.  Simmer for 15 min. Until squash is tender.   Add seasonings and put mixture into blender to puree until smooth.


Add half and half, (I add corn here) , adjust seasonings to taste and reheat– but do not boil.  Serve immediately with grated cheese.
