You can add or change whatever you prefer--- but this is my version that I LOVE!
3 1/2 c rolled oats
1 c almonds
1 c cashews
1/2 c pecans
1 c almonds
1 c cashews
1/2 c pecans
1 c unsweetened coconut pieces
1/2 c sunflower seeds
1/2 c pumpkin seeds
1 c dried cranberries
2 tsp cinnamon
1/2 tsp nutmeg
1 1/2 tsp ginger
1/3 c coconut oil (or can use butter)
1/2 c honey
2 tsp vanilla extract (or almond is yummy, too)
1/2 tsp salt
Preheat oven to 250 degrees. Cover 2 large cookie sheets with parchment paper.
Mix dry ingredients in large bowl.
Heat oil/butter and honey together in small saucepan until the oil/butter melts. Stir in vanilla and salt.
Pour hot liquid mixture over dry ingredients and stir well. Spread mixture out onto pan in even layer.
Bake for 75 min.
