Cranberry Oatmeal Cookies

I love to make these at Christmas time!


1 1/4  cups quick or old fashioned rolled oats
3/4 cup flour
3/4 cup ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
6 TBLS butter, softened
3/4 cup firmly packed brown sugar
2 egg whites
1 tsp vanilla
1 tsp finely grated orange peel
3/4 cup dried cranberries

Preheat oven to 350.  Line two cookie sheets with parchment paper.

Place oats, flour, cinnamon, baking soda, and salt in bowl, stir with a whisk.
Beat egg whites, vanilla and orange peel.  Gradually add flour and oats mixture and stir with a wooden spoon until blended.  Fold in cranberries.  Drop by rounded teaspoonfulls on to cookie sheets.  Bake for 10-12 minutes or until edges are golden.  Cool on cookie sheet 1 minute then transfer to a wire rack to cool.

Makes 24 cookies.
