Okay fall pumpkin lovers!! This is a great recipe and it is GOOD for you. I know we should worry more about the "good" in garnergirlgoodies being "GOOD" for you, not just good tasting!
These muffins are whole wheat and have 4 g fiber per muffin. Finally!
1 c whole wheat flour
3/4 c wheat bran (fyi-- find in Walmart where you find oatmeal. It is hidden on top shelf by whole grain cereal stuff)
3/4 c sugar
1 1/2 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 eggs
2/3 c buttermilk
1/4 c cooking oil
1. Heat oven to 400 degrees and prepare 12-cup muffin tin (either with papers or spray).
2. In large bowl, combine flour, bran, sugar, cinnamon, soda, powder, and salt. Whisk until mixed.
3. In large mixing bowl, whisk together pumpkin, eggs, buttermilk, and oil.
4. Fold pumpkin mixture into flour mixture and divide batter into the 12 cups. Bake 20-25 min until toothpick comes out clean.
If you prefer a different topping--- orange cream to eat on your muffins:
1/2 c sour cream, 2 Tbls powdered sugar, and 2 tsp grated orange zest-- whisk together
Haven't tried the orange cream-- but will. For the next batch, I'm going to substitute 1/2 c stevia for sugar and see if I can get these sugar-free. Regardless, they are yummy and HEALTHY (oh, no-- I said it!)
