2 -3 boneless, skinless chicken breasts
6 c chicken broth
1 Tbl garlic, minced
3/4 c tomato sauce
1 Tbls cilantro leaves, chopped
1 tsp cumin
1 1/2 tsp chili powder
1 bay leaf
Cut tortillas into strips and place on baking sheet and toast for 15 in. in 300 deg. Oven. Crush about 2/3 of strips. Heat chicken broth and add chicken breast. Simmer until chicken is cooked. Remove chicken and cut into pieces. Return chicken to broth. In another small pan, sauté 2 Tbls. Of the broth with garlic for several minutes. Add tomato sauce and sauté for 3 min. Add cilantro, cumin, and chili powder and sauté for 2 min. Add sauté mixture to broth and chicken. Add bay leaf and crushed tortillas strips. Bring to a boil and simmer for 30 min.
Garnish with remaining strips/cheese/sourcream/etc.
I personally also add 1 can of black beans and 1 lb. frozen corn to add a little extra. Could also add some petite diced tomatoes.
