Mexican Rice

2 Tbls olive oil
2 c rice
1 c beef broth (I just use a beef boullion in 1 c hot water in microwave)-- not necessary
2 1/2 c hot water
2 tomatoes, diced ( I use a can of petite diced tomatoes)
1/2 c grated carrots
1 tsp salt
1- 8 oz tomato sauce
2 Tbls taco seasoning


Brown rice in oil.    Add remaining ingredients and bring to a boil.   Let simmer for about 30 min.   You can add more taco seasoning for more flavor and also cooked ground beef to use as a main dish. (Frank Acosta)
