Canned Apple Pie Filling

6-7 quart prepared jars
lots of apples-- peeled and sliced-- soak water with 2 Tbls salt
5 c sugar
1 c cornstarch
10 c water
1 Tbls cinnamon
1/2 tsp nutmeg
1 tsp salt
1/2 c lemon juice


In a large pot, bring to a boil the sugar, cornstarch, water, cinnamon, nutmeg and salt.    After it boils, remove from heat and add lemon juice.    Drain apples and fill jars.  Pour syrup mixture over apples.   Process for 20 min. in water bath canner.  (Rozanne Quent)
