Baked Apple Pudding

2 c apples, peeled and sliced thin
1/2 tsp cinnamon
1 Tbls lemon juice
3/4 c sugar
3 Tbls margarine
1 c flour
1 tsp baking powder
1/4 tsp salt
1/2 c milk


Grease 8x8 pan.    Layer apples into pan and sprinkle lemon juice and cinnamon over apples.    In a bowl, cream margarine and sugar.   Add dry ingredients, alternately with milk.   Spread mixture over apples.

Mix 1 c. sugar and 1 Tbls Cornstarch and a dash of salt together.    Pour dry sugar mixture over batter and then pour 1 C. boiling water over the top.    Bake @ 375 deg for 1 hr.   Serve warm with ice-cream. (Marjorie Standish Maine cookbook)
