Carrot Cake

2 c flour
2 c sugar
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 1/3 c vegetable oil
4 eggs
3 c grated carrots
1/2 c nuts and/or raisins-- optional


Grease a 9x13 pan.   In a small bowl, mix dry ingredients together.   In a mixer, mix carrots and oil.   Add eggs, one at a time, beating after each one.   Slowly add dry ingredients to carrot mixture.   Stir in nuts.   Bake at 400 deg for 45 min.   Cool and frost with cream cheese frosting:

Cream Cheese Frosting
1/4 c. margarine, softened
 1– 3 oz. pkg cream cheese, softened
1 tsp. Vanilla 
1-3 C powdered sugar
Cream together cream cheese and margarine.   Add vanilla.  Add powdered sugar to desired consistency.  Spread over cake and refrigerate.
