Sourdough Starter

1 c lukewarm water
3/4 c sugar
3 Tbls instant potato flakes


Mix ingredients and keep in a quart jar with holes in the top.   Every 3-8 days feed it again with the same ingredients.  (mix ingredients first, then add to starter gently)   After feeding, let stand on the counter for 6-12 hrs.   Stir and take some out to make bread, or throw some away if jar is too full.   Keep at least in inch of starter in the jar at all times.   Keep refrigerated when you are not feeding.
