2 Tbls yeast
2 Tbls dough conditioner
1/2 c oil
1 Tbls salt
1/4 c honey
1/2 c gluten
6-8 c whole wheat flour
Dissolve yeast and dough conditioner in warm water and allow to soften. Add oil, honey, salt, and 1/2 of flour. Stir in gluten and remaining flour. Mix at lowest speed in mixer for abt. 10 min. Shape loaves and allow to rise in pans in the oven at 120 degrees for 30 min. Do not open oven door. Turn heat up to 350 degrees and bake for 30 min. until done.
Can also use for white bread— omit gluten and dough conditioner.
Makes 2 loaves.
