Frog-Eye Salad

This makes A LOT!!   Great for family gatherings!

1 C. sugar
2 Tbls flour
1/2 tsp salt
1 3/4 c pineapple juice (drained from canned pineapple chunks/tidbits)
2 eggs, beaten
1 Tbls lemon juice
1- 16 oz box of Acine de Pepe macaroni (cooked, drained and rinsed per package directions)
3- 11 oz cans of mandarin oranges, drained
2- 20 oz cans of pineapple tidbits/chunks
1 c coconut (optional)
1 pint strawberries- washed, stemmed, and sliced
2 C mini marshmallows (optional)
2- 10 oz containers of cool whip


Cook macaroni by directions on box.    Drain and rinse.   Set aside to cool.
In a sauce pan,  combine sugar, flour, salt, pineapple juice and beaten eggs.   Cook until thick and smooth.   Remove from heat and add lemon juice.    Cool.
After macaroni and sauce has cooled, stir together and add fruit, marshmallows, cool whip.   Mix well and refrigerate for several hours or overnight.    You can add/subtract any of fruit/marshmallows/coconut.
