Cafe Rio Pork

1 pork roast
water

Put pork roast in crock pot with a little water and cook until very tender--8 hours on low. Shred pork and add:

1 can enchilada sauce
2 cloves minced garlic
1 small can diced green chilis
1 can Coke (not Diet Coke)
1 cup brown sugar
salt to taste

Cook together in crock put for one more hour. Can be used in a salad, in a burrito, or as taco meat.

**We buy homemade flour tortillas, warm them, and add the meat w/ cheese, tomatoes, lettuce, beans, sour cream, etc. Be creative!
