1 med onion, chopped
2 stalks celery, chopped
3 carrots, chopped
3 cloves garlic, minced
1 T butter or marj
1 (28oz) can tomatoes, chopped
1 (20oz) can tomato sauce
1 1/2 tsp sugar
6 cup water
3 TBLS chicken bouillon powder
2 TBLS parsley
1 (10 oz) pkg tortellini, fresh or frozen
s&p to taste
1/4 c fresh basil, chopped (or 1 1/2 T dried)
-I also add chopped zucchini/yellow squash
Saute onion, celery, carrots, & garlic in melted butter until tender-crisp, about 5 mins. In a large pot, add tomatoes, sugar, water, chicken bouillon, parsley and basil. Add veggies and bring to a gentle boil. Reduce heat and simmer one hour. Add tortellini and continue to simmer until tortellini is cooked (abt 10 mins). Add salt and pepper to taste.
