Copycat Zupa’s Nuts About Berries Salad

 

Ingredients

Raspberry Vinaigrette Dressing 

Cinnamon pecans

  • 1/2 cup coarsely chopped pecans or almonds
  • 1 Tbsp sugar
  • 2 tsp cinnamon
  • Instructions

    • Wash and dry the berries and greens. Toss berries, cinnamon pecans, and feta cheese over the mixed greens. Top with our Raspberry Vinaigrette Dressing (below). This recipe makes 4 large dinner salads or 6 to 8 side salads.

    Raspberry Vinaigrette Dressing

    • Place all ingredients in a blender and blend until smooth. ***

    Cinnamon Pecans

    • Toss pecans in a skillet over medium heat. Add sugar and continue to stir pecans until the sugar is melted. Sprinkle cinnamon over pecans and remove from heat. Immediately place pecans on a piece of tin foil to cool. The pecans will burn if they are left in the skillet.

      * I omitted 
      **I used regular vinegar because that was all I had! 
      ***I strained out the seeds—made the dressing much smoother!
