4 large eggs
1 cup veg oil
2 cups sugar
2 cups solid packed pumpkin
2 1/2 tsp cinnamon
1 tsp ground cloves
1 tsp baking soda
1/2 tsp salt
2 cups flour
1 tsp ground ginger
2 tsp baking powder
1 tsp ground nutmeg
In large bowl, beat eggs, oil and sugar until well blended. Add pumpkin and mix thoroughly. In separate bowl, mix flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg. Gradually add these dry ingredients to pumpkin mixture. Mix until smooth. Pour into greased and floured 11x17 jelly roll pan. Bake at 375 degrees for 20 mins, until toothpick comes out clean. Cool before frosting.
Cream Cheese Frosting:
8 oz cream cheese, softened
1/4 cup margarine, softened
1 3/4 cups powdered sugar
1/2 t - 2/4 t ground ginger
