Mini-Meatloaf Rings

4 large bell peppers (red, yellow, orange, green)
2 lbs ground beef
1/4 cup Italian bread crumbs
1 egg
1/4 cup shredded Parmesan
a pinch crushed red pepper flakes
3 cloves garlic
1 TBSP olive oil
1 TBSP chopped fresh parsley
1 cup Italian cheese blend
1 28oz can crushed tomatoes

1.  Prepare peppers by slicing off a little of the top and bottom of each pepper.  Do not discard these.  Cut out ribs and seeds and slice into 3 thick rings and place of a sheet pan lined with parchment paper for easy cleaning.
2.  Dice up remaining parts of peppers to add to meat mixture.  Prepare meatloaf mix:  Mix ground beef with seasonings, bread crumbs, egg, Parmesan, red pepper flakes, garlic, and remaining diced peppers.  Mix until combined
3.  Stuff each pepper with meat mixture leaving a dome of the mixture on top of each pepper.
4.  Heat olive oil in a large pot over med-high heat.  Brown each stuffed pepper ring for about 4-5 mins each side.
5.  Once browned, place close together in baking pan, sprayed with pam, and pour crushed tomatoes over stuffed pepper rings.  Bake at 350 degrees for 35-45 mins.  Top with cheese and bake for 5 more minutes.  Top with fresh parsley and serve.

\NOTE:  I used 1 lb hamburger and 1 lb sausage.  I also used some oregano to season beef.
