8 cups bite-sized corn tortilla chips
1 1/2 cups refrigerated taco sauce
1 lb hamburger, cooked and drained
1 can black beans, rinsed and drained
1 cup chopped plum tomatoes
3/4 cup diced peeled, pitted avacado
1 can or cup of corn
1/2 cup chopped green pepper
1 cup shredded Monterey Jack Cheese
1 cup shredded Cheddar Cheese
Heat grill. Cut four 18x12 inch sheets of tin foil; spray with Pam. Spread tortilla chips in center of each foil sheet.
Mix taco sauce with ground beef and spoon evenly over chips. Sprinkle remaining ingredients evenly over beef mixture. (I put down chips and then mix all other ingredients in one bowl and then spoon over chips).
Wrap each packet securely using double-fold seals, allowing room for heat expansion.
Place on grill over medium heat and cook for 10-15 mins or until cheese is melted and ingredients warmed through.
Carefully open each packet to allow steam to escape. Enjoy!
