Pumpkin Roll

3 eggs
2/3 cup pumpkin
1 cup sugar
1 tsp soda
1/2 tsp cinnamon
3/4 cup flour

Mixture will be soupy.  Put in greased 10x15.5" jelly roll pan lined with wax paper.  Bake at 375 degrees for 12-15 mins.  Will be quite brown--loosen edge with knife.  Flip onto pillowcase sprinkled with powered sugar.  Roll long way and put in fridge to cool.  

Unroll, frost, re-roll.

Frosting:
2 TBLS soft butter
8 oz softened cream cheese
1 cup powered sugar

Wrap in  foil and freeze.  Let thaw 10-15 mins before slicing.  Do not thaw completely...too soft to cut.
