Mix together in large bowl:
3 cups flour
2 cups sugar
2 tsp baking soda
2 tsp cinnamon
2 tsp salt
Stir in 1 1/4 cup oil
Add 4 large eggs, beaten
3 cups grated carrots
1 cup walnuts
1 cup raisins (opt)
1 TBLS vanilla
Mix with large wooden spoon until no sugar crystals are visable.
Spread in greased 9x13 pan.
Bake at 350 for 30 mins. Turn down oven to 300 degrees and cook 30 more mins.
Cool completely and frost.
Cream Cheese Frosting:
Cream 1 cube margarine, 1 (8oz) cream cheese brick, 2 tsp vanilla. Add 1 lb (1/2 plastic sack) and beat until smooth.
*Cream Cheese frosting also excellent on pumpkin bread!
