MaryAnn's Maine Blueberry Pie




5 cups blueberries (Mom uses 6 cups b/c Wyman's Maine blueberries come in 3 c bags)
1 tsp lemon peel, grated
1/2 tsp cinnamon
3/4 - 1 cup sugar (use 1 cup for the 6 cups berries)
1/3 cup flour
Dash of salt

Mix all ingredients in large bowl, being careful not to squish berries.

Pour into a unbaked pie shell.

PDot top with 1 1/2 TBLS of margarine, cut up to dot several places on top of berries.

Add top crust and seal edges.  Egg wash top crust.  Slit vent holes.

Bake at 375 degrees for 45 mins (may be more).  You can know when it's done because filling bubbles through vent holes and is thick.

Set to cool on wire rack.
