Tomato Basil Chicken

Serves 4


2 chicken breasts
salt and pepper
2 TBSP extra virgin olive oil
2 cups chopped fresh tomatoes
2 tsp minced garlic
4 TBSP cold butter
1/2 cup fresh basil, chopped
freshly grated Parmigiano reggiano cheese for garnish (I used parm)

Season chicken with salt and pepper.Add oil to a skillet and let heat up.  Begin water for your pasta at this point (your choice of pasta to serve this over).

When oil is hot, add chicken.  After 4-5 mins, turn chicken and brown other other side 4-5 mins or until juices run clear when pieced with a knife.

Add fresh tomatoes and chopped basil.  Stir and then add cold butter and minced garlic.  After everything is well mixed and sauce is silky, remove chicken and slice on bias.

Put pasta on plate, add chicken on top and then pour sauce over top.

NOTE:  I didn't want a heavy basil taste, so I used about 1/3 cup basil and then added about 1/3 cup chopped spinach.
