Truffles

This is pretty simple recipe for candy.   However, I can only make it taste great-- it doesn't always look so great.   I usually just cut into pieces and drizzle with chocolate, but, you can also dip them.  (Thank-you Deniece Burden!)

Directions for all flavors:
1. Line an 8x8 pan with plastic wrap
2. Scald cream-- don't boil-- just scum it.  Cool for 5 min and add flavorings.
3. Slowly melt chocolate
4. Start beating chocolate in mixer.
5. Add cream mixture all at once and beat until smooth (1-2 min)
6. Refrigerate for 6 hrs.
7. Cut into squares and dip or drizzle to decorate.   Keep refrigerated.


Lemon:
2/3 c whipping cream 
1 1/2 lb. white chocolate ( 4 1/2 c.)
1 tsp  lemon extract  
1/2 tsp ciitric acid


 Snow:
2/3 c whipping cream 
1 1/2 lb. white chocolate (4 1/2 c)
1 1/2 tsp. Extract of choice

Elegant Chocolate:
1 1/2 lb chocolate (4 1/2 c chips)
1 c whipping cream
1 1/2 tsp vanilla

Berry:
1/3 c whipping cream
3/4 c white chips
1/4 tsp citric acid
1/2 c seedless raspberry jam
