Easy Enchiladas

This recipe is simple because I am too lazy to roll enchiladas, because everything falls apart while baking anyways.   Also-- simple ingredients and WAY less fattening than the recipes that call for cream soup and sour cream.    You can add the extra fattening ingredients as garnishes and save some calories.

Green Chicken Enchiladas:
12 corn tortillas
2 c chicken, cooked-diced (or 2 cans)
1 large can of green enchilada sauce of choice
lots of cheese

OR

Red Beef Enchiladas
12 corn tortillas
2 c shredded beef or hamburger
1 large can of red enchilada sauce of choice
cheese

Lazy directions!
Put down a layer of meat in 9x13 pan.   Add a little sauce over it.  Rip up tortillas into pieces and lay over meat.   Add another layer of meat-cheese- sauce.   Continue another layer and finish by pouring sauce over top layer of tortillas (so you don't have dry spots on top).   Cover in cheese.   Bake at 350 degrees for 30 minutes and serve with favorite garnishes.   It doesn't look as nice as rolled enchiladas-- but tastes the same!
