1 c sugar
2 egg yolks, beaten until light-colored
5 Tbls cocoa
2 c flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 c milk
1 tsp vanilla
Cream together shortening and sugar. Add beaten egg yolks and mix well. Sift together dry ingredients. Add alternately to creamed mixture with milk and vanilla. Drop onto ungreased cookie sheets and bake at 375 deg. For 8-10 min. Cool and put together with filling below.
Creme filling:
1/2 c shortening
2 c powdered sugar
2 egg whites
1/2 tsp salt
1 tsp vanilla
Beat egg whites until stiff. Fold in some powdered sugar. In a separate bowl, cream shorenting. Add remaining of powdered sugar and more if necessary. Add salt and vanilla. Fold in beaten egg whites and mix well.
Wrap pies in wax paper to keep fresh and from sticking together. Makes 1 dozen whoopie pies.
