Citrus Trifle

2 large lemons- juiced
2- 8oz pkg cream cheese, softened
2 c powdered sugar
1 Tbls orange peel
2 tsp lemon extract
1 1/2 pints whipping cream-- whipped
1 angel food cake
Assorted fresh fruit--- pineapple chunks, strawberries, mandarin oranges, raspberries, blueberries, blackberries, kiwis,etc


In a large bowl, mix cream cheese, powdered sugar, lemon extract, lemon juice, and orange peel until blended. Gently stir whipped cream into the cream cheese mixture.   Place slices of angel food cake on the bottom of the trifle dish.   Add a layer of citrus filling.   Arrange a layer of desired fruit.   Continue to layer until ingredients are finished.    Refrigerate for at least 2 hrs. before serving.

THIS IS MY ABSOLUTE FAVORITE!!!   So yummy-- especially in  summer.   You could make individual servings by just putting citrus cream on angel food cake and top with fresh fruit.   I love to layer fruits around and make a pretty arrangement in clear trifle dish (yes, I know, I said "pretty").
