1 white cake mix
1 can coconut milk
Eggs and oil as called for on the box
½ cup minced coconut (I throw it in my food processor with the blade attachment)
½ cup minced toasted coconut (same as above) for the frosting
Make cake mix according to directions on box, except use coconut milk in place of the water. If one can doesn’t yield enough coconut milk, then add enough water to make the total amount needed. Beat in the minced (untoasted) coconut as well.
Bake as usual. Cool completely.
I use a buttercream frosting and mix in the minced toasted coconut as well as a hint of almond flavoring. Frost and enjoy!
