Mary Ann Smith's Scotch Shortbread
2 cups flour
3/4 cup powdered sugar
1 heaping tablespoon cornstarch
1 cup butter (not margarine)
* pre-heat oven to 350 degrees
* mix all ingredients together until a soft dough texture (can also use an electric mixture with a dough hook attachment, but may need to knead a bit by hand to bring it all together), form into a ball and cut in half
* dust surface with flour so dough does not stick
* pat halves into two rounds (should resemble thick pizza crust), lightly dab a fork over the surface and cut into pieces
* bake for 12-15 minutes or until golden brown on an ungreased cookie sheet... watch carefully as baking time may vary by several minutes, depending on the thickness of the pieces (I use parchment paper and they all come out perfect!)
NOTE: You can also melt some semi-sweet chocolate (I like Baker's Chocolate) to dip the cookies into for a sweeter treat! (Jen Schaab)
