Nancy's Carrot Cake

Mix: 3 cups flour
3 cups sugar
2tsp soda
2 tsp cinnamon
2 tsp salt

Stir in 1 1/4 cups oil
Add 4 large eggs, beaten
3 cups grated carrots
1 cup nuts
1 TBLS vanilla

Mix with large, wooden spoon until no sugar crystals are visible.

Bake at 350 degrees for 30 minutes. Turn down oven to 300 degrees and bake 30 minutes more.

Frost with cream cheese frosting when cooled.


Cream Cheese Frosting
Cream:
1 cube margarine, softened
1 8oz pkg cream cheese, softened
2 tsp vanilla
Then add 1 lb powdered sugar (about 1/2 plastic bag)
