2 lbs chicken breast, cut into squares
1/2 cup flour
1/2 tsp salt
1/8 tsp pepper
2 eggs, beaten
Dip chicken pieces into egg then coat with flour seasoned with salt and pepper. Fry in oil and drain.
Glaze:
1/3 cup soy sauce
1/3 cup honey
1 TBLS dry cooking sherry
1 clove garlic, minced
1 tsp ginger, ground
Combine and heat, either on stove (5 mins on low) or in microwave (2 mins).
Place fried, drained chicken pieces on baking sheet (tin foil lined is best). Brush pieces with glaze. Bake at 250 degrees for 10 minutes. Remove and brush with glaze once again. Bake another 10 mins (20 mins total).
Serve with rice. Can reserve extra glaze for dipping sauce.
