Honey Glazed Chicken Breast

Makes 6 servings
10 minute preparation + at least 20 minutes marinating + 10 minutes cooking time

Ingredients:

  • 6 boneless chicken breasts
  • 3 tablespoons butter, softened
  • 1/4 cup honey
  • 1/4 cup barbecue sauce
  • 2 teaspoons seeded mustard
Directions:
  1. Trim chicken of fat and tendons
  2. Make 3 or 4 diagonal slashes on top of each chicken breast
  3. Combine butter, honey, bbq sauce, and mustard in a small bowl. Spread half of marinade thickly on slashed side of chicken. Marinate in fridge for at least 20 minutes.
  4. Grill slash side up on hot, lightly greased grill or griddle. Cook 2 to 3 minutes each side or until done. Brush with reserved marinade several times while cooking. Serve hot with buttered noodles, if desired.
So fast and easy! And DELICIOUS!

Notes: When honey is cooked, its sugars caramelize and some of its flavor is lost. For a distinctive taste to this dish, use honeys with a strong, dark flavor, such as leatherwood, lavender or rosemary. Lighter honeys, such as yellow box, orange blossom or clover, will sweeten and glaze the meat without necessarily affecting its flavor. Usually the paler the honey, the milder its flavor.
