1 1/2 lbs beef chuck or round steak
1 1/2 cup sliced yellow, red, green, yellow peppers
1 cup sliced green onion
1 TBLS cornstarch
3/4 cup water
salt & pepper
1 cup diced tomatoes
Marinade:
1/3 cup soy sauce
1 clove garlic
1/2 tsp paprika
1/3 cup oil, divided
Cut beef into thin strips. Combine soy sauce, garlic, paprika, and 1/4 cup oil--mix. Add beefstrips and toss to coat. Let stand at room temperature for 30 mins. Prepare vegetables. Heat remaining oil; brown beef (for more tender beef, add a bit of water and simmer about 20 mins). Remove beef and add veggies (not tomatoes) to pan stir frying about 10 mins until crisp. Add meat back to pan. Mix cornstarch and water and add to pan. Stir until thickened. Add tomatoes and salt and pepper just before serving.
Serve w/ rice or noodles.
