Mary Ann's Swedish Meatballs (Two versions)
We always used these for catering jobs in Maine and they are delicious!! It's from a handwritten recipe, so I'll try to cobble it together the best I can. If you try it and I need to make corrections, please let me know!
Version #1:
1 pound ground beef
1 tsp salt
2 tbls cornstarch or potato flour
1/4 tsp ginger
1/8 tsp nutmeg
1/4 tsp pepper
1 egg
1 cup bread crumbs
2 cups milk
Mix all ingredients together, except for the milk; then slowly add milk little by little; you want the mixture sticky but not runny. Roll into balls. Broil about 5 minutes, turn all meatballs over. Broil another 5 minutes. Check for "doneness" and broil a few more minutes, if needed.
Version #2:
4 tbls butter (maybe this is for the gravy?)
6 tbls chopped onion
1 pound hamburger
1/4 pound ground pork
1/2 cups bread crumbs
1/2 cup milk
1 egg, beaten
2 tsp sugar
1/4 tsp salt
1/2 tsp nutmeg
1/4 tsp allspice
GRAVY:
3 tbls flour or cornstarch
1 cup water
1 cup cream
1/2 tsp salt
1/4 tsp pepper
1 tsp sugar
In medium pot, melt butter; stir in flour or cornstarch, salt, pepper, and sugar. Stir in the water and cream. Cook over medium-medium high heat until is starts to thicken and bubble. Reduce heat and stir for a few more minutes, until desired consistency is achieved.
