KATE LOVES these! She asks for them all the time and won't eat any other mashed potatoes. I have to admit that I love this recipe-- it takes all the stress over boiling potatoes and worrying about them. It requires only the slow cooker and cuts down on all the dishes. We eat these almost every family meal.
5 lbs of potatoes -- peeled and cubed
1 c chicken broth (I just sprinkle on some chicken bouillon and add 1 c water)
4 cloves of garlic- minced/crushed
1/3 c butter - diced into pieces
salt -- sprinkle over potatoes--- careful -- depends on how much bouillon you use.
1/3 c milk
2/3 c sour cream
1/2 c grated cheese (calls for parmesan-- I usually use cheddar)
pepper
1- Place potatoes, broth, garlic, and butter into 6 qt slow cooker. Sprinkle with salt and mix in pot and over. Cook on high for 4 hrs or low for 7-8 hrs.
2- Mash potatoes with mash-- right in crock pot. Stir in milk, sour cream, and cheese. Can always add more to make as creamy as you want. Can add some pepper--- (DON'T add pepper while potatoes are cooking-- turns potatoes black-- learned that the hard way).
3- Can keep on warm setting until time to serve.
I have also done them in insta-pot and pressure cooked when I needed them quicker. Love that I can make ahead and keep warm. So incredibly yummy! Insta -pot for 7 min.
