Baked Sweet and Sour Chicken

Chicken Coating:
3-4 chicken breasts
salt
pepper
1 cup cornstarch (or just use flour)
2 eggs, beaten
1/4 cup vegetable oil

Sweet and Sour Sauce:
3/4 cup sugar
4 T ketchup
1/4 cup white vinegar
1 T soy sauce
1 t garlic salt

Cut chicken into pieces/cubes. Heat oil in skillet. Combine cornstarch/flour and some salt/pepper. Dip chicken into egg then into flour mixture. Cook chicken till golden brown, but not cooked through. Place chicken in 9x13. Mix all sauce ingredients and pour over chicken. Bake 45 minutes-1 hour, till chicken is cooked. Every 15 minutes, turn chicken over so both sides get to cook in sauce. Serve with rice.
