Fudge Base
4 cups sugar
20 large marshmellows
1 1/3 cup evaporated milk
Peanut Butter Fudge: 1 1/2 cups peanut butter
1 stick margarine
Chocolate Fudge: 12 oz semi-sweet choc chips
2 sticks margarine
In large mixing bowl, place ingredients for chocolate or peanut butter mixture. Set aside until base is finished cooking.
Place fudge base materials in heavy pot, stir and bring to full boil. Lower the heat to medium and cook for 10 minutes, stirring constantly. Don't worry if the mixture shows some brown flecks as it will not affect the finished product. Remove from heat.
Add:
2 tsp vanilla
Pour hot mixture into mixing bowl prepared for either chocolate or peanut butter and beat 3-5 minutes. The peanut butter will not require as much beating.
Pour into a buttered 9x13 pan. Cool, cut, refrigerate. Using room temperature ingredients is helpful.
