Oatmeal Scotchies

1 1/2 c flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 c margarine/butter, softened
3/4 c brown sugar
3/4 c sugar
2 eggs
1 tsp vanilla and/or grated orange peel
3 c oats
1 1/2 c butterscotch chips (and/or chocolate chips work!)


Combine first 4 ingredients and put aside.   Cream butter, sugars, eggs, and extract.
Gradually add flour mixture.   Stir in oats and chips.   Drop by rounded tablespoons onto ungreased cookie sheet.   Bake at 375 for 7-8 min(chewy) or 9-10 for crispy.  Cool for 2 min. on cokie sheet and remove to racks to cool.
