Mexican Flan

6 eggs
 2 cans sweetened condensed milk
2 cans whole milk
2 Tbls vanilla


Caramelize large bread pan by melting on medium heat on stovetop 1/2 c sugar and 2 tsp. of water.   Spreading evenly on bottom and sides.  Tilt pan back & forth to coat until golden caramel (abt 8 min).  Allow to cool.
Beat eggs.   Add sweetened condensed milk and use same cans to add regular milk.   Add vanilla and mix well.   Pour into bread pan.   Place bread pan into another pan filled with 1” water.   
Bake 350 deg for 1– 1 1/2 hrs. until knife comes out clean.
Cool and chill.   Loosen around edges with knife and invert onto plate.  (Carmen Acosta)

** Please note:  This is mexican flan---- NOT french flan.   There is a difference and you can always ask my dad if you don't know.
