Beef Stew

1 lb stew beef
1/3 c beef soup base, or 4 beef boullion cubes
3 bay leaves
1/2 tsp cracked pepper (will add a little spice)
4-6 potatoes, peeled and chopped to bite size pieces
4  c carrots, chopped to bite size pieces
2 cans of corn or creamed corn or 1 lb. bag of frozen corn
Additional salt to taste


In large stew pot, place stew beef, soup base, cracked pepper and bay leaves.   Fill pot 1/3 full of water.    Let boil (simmer) until meat is tender (abt. 1 hr)
 Remove bay leaves .  Add additional water and salt to taste.   Add beef, carrots and potatoes and bring back to a boil.  Let simmer until vegetables are tender and add corn about 30 min. before serving.  

*** Can also just throw everything in a crockpot and let it cook all day.   I usually cook the meat/boullion/water/bay leaves for 4 hours in crockpot.   Then, I add vegetables and cook for another 4 hours.   However, I've also just thrown it all in for the day.

*** Insta pot--- I cook the beef with the soup base and then add the vegetables(not corn) and cook again.  I add corn while it is still hot since it just needs to warm.    Makes meat super tender and yummy.
