Basic Cheese Sauce

You can use this sauce for homemade macaroni-n-cheese, scalloped potatoes, and even Alfredo sauce.   It is easy and yummy.

4 Tbls margarine
1/4 c flour
1/2 tsp pepper
2 tsp salt
1/2 tsp dry mustard
3 c milk
4 c cheddar cheese (or any cheese you love)


In a saucepan, melt margarine.   Whisk in flour, pepper, salt, and dry mustard.
Add milk slowly and continue to stir constantly until mixture thickens.   Remove from heat and add cheese.   

Baked Macaroni & Cheese: Pour sauce over 1 lb. cooked macaroni. Bake 30 min. (9x13 pan)

Scalloped Potatoes:  Pour over 6-8 peeled and thinly sliced potatoes and cook 1 1/2 hrs. at 350. (9x13)
I like to add chopped ham—- if you do, decrease salt to 1 tsp.

Alfredo sauce:
Add parmesan cheese for cheddar cheese.   Makes a large batch of sauce to serve over fettucine, ravioli, or tortellini.   Can add meats & veggies as desired.
