Key Lime Cake

Cake:
1- 3 oz pkg lime-flavored gelatin
1 - 1/3 c sugar
2 c sifted flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
5 eggs, slightly beaten
1- 1/2 c vegetable oil
3/4 c orange juice
1 Tbls lemon juice
1/2 tsp vanilla
1/2 c key lime juice
1/2 c confectionate sugar

Preheat oven to 350 degrees.  Grease and flour 3- 9" round pans.    In large mixing bowl, mix gelatin, sugar, flour, salt, baking powder, and baking soda.   Stir to mix well.   Add eggs, oil, orange juice, lemon juice, and vanilla.   Divide batter evenly among 3 pans and bake 30-35 minutes.   Check for doneness by lightly touching tops, or inserting a toothpick.  Cool layers in pans for 5 minutes, then turn onto racks.
While layers are still hot, mix the lime juice and confectionate sugar and pour it over the layers on the racks. You can pierce the layers with a fork to allow glaze to soak in better.  Allow layers to cool completely before frosting.
Frosting:
1/2 c butter, softened
1 8 oz pkg cream cheese, softened
1 lb. confectionate sugar
1/8 tsp salt

Cream butter and cream cheese.  Beat in salt and confectionate sugar until mixture is smooth and easy to spread.  (Frosting is optional).

Also makes great cupcakes--does not work very well in 9x13 and NEVER try to double recipe for a 1/2 sheet cake pan-- to large for cake to rise.
