Canned Peach Filling

For 1 quart:                                 For 7 quarts
3 1/2 c fresh peaches                   6 quarts peaches
1 c sugar                                     7 c sugar
5 Tbl of clear jel                          2 1/3 c clear gel
3/4 c water                                  5 1/4 c cold water
1/8 tsp cinnamon                         1 tsp cinnamon
1/8 tsp almond extract                 1 tsp almond extract
1 Tbl lemon juice                         1/4 c lemon juice

Peel and slice up peaches.   Sprinkle with 1/4 lemon juice or fruit fresh to keep peaches from browning.
Make filling by combining sugar, clear jel, water, cinnamon, and extract.   Stir and cook over medium heat until mixture thickens and begins to bubble.  Add lemon juice and bowl sauce 1 more minute, stirring constantly.   Combine liquid with fruit and fill jars to 1" from top.   Wipe rims of jars clean, seal the lid and tighten the ring and process jars for 30 minutes.
