1 c uncooked rice
1 tsp margarine
2 tsp minced garlic
1 tsp lime juice
1 can chicken broth (15 oz)
1 c water
1 Tbls lime juice
2 tsp sugar
3 Tbls cilantro, chopped
In a saucepan, combine rice, margarine, garlic, 1 tsp of lime juice, chicken broth and water. Cover and cook on low 15-20 min until rice is tender. Remove from heat. In a separate bowl, combine remaining lime juice, sugar and cilantro. Pour over and stir into cooked rice.
